Tiny Pizzas
Ingredients:
- 1 standard-sized bagel (or English muffin) cut in half
- tomato sauce
- mozzarella cheese
- toppings like diced green pepper, chopped onion or chopped tomato (whatever you like)
- seasonings like pepper and fresh basil
Utensils:
- oven
- knife
- baking sheet
- cheese grater
(You may need help from your adult assistant when working with knives or the oven.)
Directions:
Set the oven to low heat.
Spread tomato sauce on each bagel half.
Sprinkle shredded cheese all over the tomato sauce on each half.
Add your favorite toppings.
Put your bagel halves on the baking sheet.
Bake in the oven on low heat for about 5 to 8 minutes. You’ll know they are done when the cheese is bubbly.
Put a light sprinkling of seasonings on each half.
Let cool for a minute before enjoying your tiny pizzas!
Sausage and Basil Pasta Sauce
(makes 8 – 10 cups of sauce)
Utensils:
- oven (You’ll need help from your adult assistant)
- knife
- frying pan
- big pot/ slow cooker
(You may need help from your adult assistant when working with knives or the oven.)
Ingredients:
- 1 – 2 cans tomato sauce
- 1 – 2 cans diced tomatoes
- 3 T dried basil
- 3 T dried oregano
- 2 T ground fennel seed
- 3 T minced garlic or garlic puree
- 5 dried bay leaves
- 1 pkg. (5 links) turkey Italian sausage
- 1/4 cup olive oil plus 1-2 T for browning sausage
- 1/4 cup (or less) chopped fresh oregano
- 1/2 cup (or less) chopped fresh basil
Directions:
Combine the first 7 ingredients and simmer for 1-2 hours. A slow cooker would be ideal but a pot on low heat will work as well.
Put half of your olive oil into a frying pan and brown the turkey sausage. When it’s cooked, add the sausage to the sauce. Simmer for 2 more hours.
When sauce has thickened to the way you like it, add a generous amount of chopped fresh basil, a little fresh oregano, and the rest of your olive oil and simmer 10-15 minutes more.
Good things come to those who wait! Patience is a must for this hearty recipe.
Orange-Pineapple Smoothie
Utensils:
Blender
Ingredients:
- 1 cup orange juice
- 2 cups pineapple chunks packed in their own juice, drained
- 1 banana
- 1/4 cup skim milk 2 Tbsp. honey
- 4 – 5 ice cubes
Directions:
Place all ingredients in a blender and purée until smooth
Fruit Kabobs
Ingredients:
- 1 apple
- 1 banana
- 1/3 cup red seedless grapes
- 1/3 cup green seedless grapes
- 2/3 cup pineapple chunks
- 1 cup nonfat yogurt
- 1/4 cup dried coconut, shredded
Utensils:
- knife (You’ll need help from your adult assistant)
- 2 wooden skewer sticks
- 2 large plates
(You may need help from your adult assistant when working with knives.)
Directions
Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it’s fresh. Put the fruit onto a large plate.
Spread the coconut onto another large plate.
Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.
Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut.
Repeat these steps with another skewer.
